I love pancakes in the morning. I also love fruits. When I read this article and found this recipe, I didn't waste my time. I went to buy the stuff I need and off I made my own version of banana dressing. Oh! I just love it. It gives more sweetness to my pancakes and it was so yummy. Thank you for all the information you have posted here about Belizean recipes. I really appreciate it. I am a Culinary Arts teacher and I am teaching international cuisine. I am so thankful because I will have something to add in my cuisine collection. I will have new recipes to try at home and teach my students. I am very excited to experiment on these simple dishes. I would only eat corn, that has been steamed, with butter and salt. Steam the corn over boiling water until soft, normally about 20-30 minutes. Take out and cool on a rack for a few minutes. Spread butter over the corn. Sprinkle with lots of salt and eat with your hands. Or, you can also barbecue them, if you like a smoky flavour. Place onto the barbecue, take the skins off first, and turn regularly, until they are brown all over. Take off, cool, and rub with butter and salt. These are a great accompanyment to any outdoor barbecue meal or al fresco entertaining. Bright and fresh, they liven up your meal table beautifully.
